Raspberry Mule

Cocktail Ingredients
- 12 fresh raspberries
- 2 shots of vodka
- 1 shot of freshly squeezed lime juice
- 1/2 shot of sugar syrup
- Top up with ginger beer
Method
Muddle raspberries in base of shaker. Add next three ingredients. Shake with ice and fine strain into ice filled glass. Top with ginger beer and lightly stir.

Raspberry Caipirinha

Cocktail Ingredients
- 3/4 fresh lime cut into wedges
- 8 fresh raspberries
- 2 shots of leblon cachaca
- 3/4 shot of sugar syrup
Method
Muddle lime and raspberries in the base of the glass. Add other ingredients and fill glass with crushed ice. Churn drink with bar spoon.

Raspberry Lynchburg

Cocktail Ingredients
- 2 shots of jack daniels
- 3/4 shot of freshly squeezed lime
- 1/4 shot of sugar syrup
- Top up with lemonades
- 1/2 shot of chambord black raspberry liqueur
Method
Shake first three ingredients with ice and strain into ice filled glass. Top up with lemonade and drizzle liqueur over surface of drink/ It will fall through the drink leaving coloured threads.

- 7 fresh raspberries
- 2 shots of tequila
- 1 cointreau triple sec
- 1 shot of freshly squeezed lime juice
- 1/8 shot of sugar syrup
Method
Muddle raspberries in base of shaker. Add other ingredients. Shake with ice and fine strain into a chilled glass.

- 2 1/2 shots of cranberry juice
- 1 1/2 shots of grapefruit juice
Method

Rays Hard Lemonade

Cocktail Ingredients
- 7 mint leaves
- 2 shots of vodka
- 1 shot of freshly squeezed lemon juice
- 2 shots of freshly squeezed lime juice
- 1 1/2 shots of sugar syrup
- Top up with soda water
Method
Lightly muddle the mint leaves in the base of the shaker (just to bruise). Add the next four ingredients and shake with ice. Fine strain into an ice filled glass. Top up with soda and lightly stir.

- 1 1/4 shots of gin
- 1 1/4 shots of grand marnier liqueur
- 1 shot of freshly squeezed orange juice

- 1 shot of citroen vodka
- 1/2 shot of cointreau triple sec
- 1 shot of cranberry juice
- 1/4 shot of freshly squeezed lime juice
- Top up with Brut champagne
Method
Shake first four ingredients with ice and fine strain into a chilled glass. Top up with champagne.

Royal Mojito

Cocktail Ingredients
- 12 fresh mint leaves
- 2 shots of light white rum
- 3/4 shot of freshly squeezed lime juice
- 1/4 shot of sugar syrup
- Top up with Brut champagne
Method
Lightly muddle mint (just to bruise) in base of glass. Add rum, lime juice and sugar. Half fill glass with crushed ice and stir with bar spoon. Fill glass with crushed ice and stir some more. Top up with champagne and lightly stir.
