Caipirinha

Cocktail Ingredients
- 3/4 lime cut into wedges
- 2 shots of leblon cachaca
- 3/4 shots of sugar syrup
Method
Muddle the limes in the base of the shaker to release the juices and oils from the skin. Pour the cachaca and sugar syrup in to the glass and fill with crushed ice. Churn and stir with your bar spoon.

Cocktail Ingredients
- 3 spoons of runny honey
- 2 shots of light white rum
- 1 1/2 shots of freshly squeezed lemon juice
Method
Stir the honey with the rum in to a chilled glass. Add lemon juice and ice. Stir and serve.

Cocktail Ingredients
- 1 1/2 shots of citroen vodka
- 1/2 shot of cointreau triple sec
- 1 shot of cranberry juice
- 1/4 freshly squeezed lime juice
Method
Shake all the ingredients with ice and fine strain in to a chilled glass.

Cranberry and Mint Martini

Cocktail Ingredients
- 9 fresh mint leaves
- 2 shots of vodka
- 1 1/2 shots of cranberry juice
- 1/4 shots of pommegranate (grenadine) syrup
Method
Lightly muddle the mint leaves in the base of the shaker (enough to bruise). Add other ingredients. Shake with ice and fine strain in to chilled glass.

- 3/4 shot of campari
- 3/4 shot of freshly squeezed orange juice
- 3/4 shot of pineapple juice
